Jean-Baptiste was born and brought up in the Jura/Franche Comté region, his professional background is that he worked teaching children with learning difficulties. His passion for wine led him to enrol in a viticulture and wine-making course at Beaune in 2010-2011. He carried out his work experience with a Jura vigneron, who farms biodynamically, called Stéphane Tissot. It was Stéphane who encouraged Jean-Baptiste to become vigneron, and who gave him the moral support and the confidence to set up his own wine-making estate. Jean-Baptiste founded his own estate ‘Les Bottes Rouges’ in 2012, first of all, renting vines, and then buying them gradually. TERROIR: limestone soils VITICULTURE: ORGANIC but biodynamic practices are also used. Jean-Baptiste says that he is very careful to follow the lunar calendar in order to carry out the bottling or the racking, also, biodynamic preparations are used on the vines, too. VINIFICATION: Utilizes debourbage (a process in which the lees are allowed to settle before racking tominimize the need for filtration) before being put back into barrel for élevage.
ORGANIC but biodynamic practices are also used. CERTIFICATION: Certified Organic by Ecocert since 2012. Some of the estate’s vines are certified and others are not, as new parcels are being acquired constantly.
Chardonnay ‘Léon’ comes from low yielding (25hl/ha) vineyard planted in 1956, on clay soils. Direct, gentle press and fermented/aged for 6 months in 3,000l oak foudre.
