This is a project that aims to make wines from the best Galician areas and with traditional varieties from each area. At the head of the technical direction is the prestigious winemaker José Manuel Martinez Juste, also a winemaker at the Quinta de Couselo winery, a winery belonging to the group of large payments since 2013. Fraga do Corvo Mencía is a wine made with 100% Mencía from a vineyard located on one of the historic slopes of Monterrei, The harvest is manual in boxes of 15 kg, with selection of grapes in the vineyard. Once the grapes arrive at the winery, they are refrigerated in a cold room at 5 ° C. After a second selection of grapes on a vibrating table, it is de-stemmed by hand and a cold maceration that lasts two weeks begins, after uncovering it is fermented in 500-liter French oak barrels. When the alcoholic and malolactic fermentation ends, part of the wine undergoes a static aging in stainless steel tanks and the other part in fine-grained French oak barrels for 7 months. Minimum of three months of rest in the bottle before going on the market.
