Domaine Chatzivaritis, Goumenissa, Kilkis
Domaine Chatzivaritis is a 18-hectare estate in Goumenissa, focusing on traditional Greek varieties (Xinomavro, Negoska, Roditis, Malagousia, Muscat and Assyrtico). Daughter Chloi took over from parents Vagelis and Olga in 2017, having studied oenology in France and Portugal (and worked in Chile and New Zealand), bringing with her passion and experience for low intervention wines new wine making techniques. The estate now follows environmentally conscious philosophies, aimed at a low-interventionist approach to obtain the best quality of grapes while preserving soil fertility.
Very careful selection of the grapes, foot stomped, pre-fermentation cold maceration for 2 days, spontaneous fermentation in old French oak barrel (6 years old) with no additions, wine remaining with the lees for 3 months with. Unfined and unfiltered, with a small amount of sulfites (21mg/L total sulfites).
Pale yellow color with golden hints and a light turbidity. Aromas of stone fruits, quince, white flowers, green apple and honey. It is full bodied and fatty in the mouth, with good acidity and a long finish.
