González-Byass is one of the most iconic estates in Jerez, producing some of the region’s finest wines for over 175 years. We are thrilled to offer a handpicked selection of their rarest and oldest Sherries. Named after the palma chalk used by winemaker Antonio Flores and the cellar masters to mark a wine’s maturity, the ‘Palmas’ range is fuller bodied and intensely aromatic. Matured in oak casks for a minimum of 30 years, their Rare Old Solera Sherries are a true expression of some of the world’s finest and rarest wines.
Coming from a solera created in 1862 to honour her Majesty Queen Isabel II of Spain to commemorate her visit to the estate, González-Byass Palo Cortado ‘Apóstoles’ spends more than 30 years ageing to produce a concentrated, deep amber-hued sherry from a blend of Palomino and a touch of sun-dried Pedro Ximenez which add richness. This is an extremely rare style of sherry which is initially aged under flor to produce a Fino, but naturally loses its protective layer to begin ageing oxidatively like in the production of an Oloroso.
