Named for the beautiful flower that grows on Tenerife (which is also depicted on the labels),Tajinaste is run by the indefatigable Agustín García Farrais. He works alongside his parents, Cecila (“Chilla”) and Agustín Snr., who are both 70 years old going on 30. The bodega was started by Agustín’s grandfather. They own 3 hectares, and the oldest vines were planted in 1914. In addition, they rent 9 hectares with 25-year contracts with their neighbors and buy grapes from another 16 hectares worth of vineyards, so the total under management is 28 hectares.
Agustín is a precise winemaker. He vinifies each parcel separately, which has allowed him to get to know the character of each vineyard so well that he can masterfully blend extremely consistent and beguiling wines year after year.
The Tinto Tradicional from Tajinaste is made entirely from Listán Negro, with twenty percent of the cuvée vinified by carbonic maceration and thirty percent raised in older American oak casks for a few months prior to blending and bottling. The 2020 is excellent, wafting from the glass in a complex aromatic blend of sweet dark berries, woodsmoke, chicory, beautiful soil tones and a gentle botanical topnote redolent of balsam boughs. On the palate the wine is deep, full-bodied and tangy, with lovely soil signature, a fine core, gentle tannins, bright acids and lovely length and grip on the complex finish.
